Ingredients
  • 3 eggs
  • 1 C. applesauce
  • 1 1/2 C. granulated sugar
  • 1/4 C. butter or margarine
  • 2 tsp. vanilla extract
  • 1 C. zucchini, grated
  • 1 C. carrots, grated
  • 1 1/2 C. raisins
  • 1 C. pineapple, crushed and well drained
  • 3 C. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 1/2 tsp. nutmeg
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. salt

Directions
  1. Beat together eggs, applesauce, sugar, butter, and vanilla extract.
  2. Stir in grated zucchini, carrots, raisins, and pineapple.
  3. Mix together flour, baking powder, soda, nutmeg, cinnamon, and salt.
  4. Stir flour mixture into egg / applesauce mixture just until dry ingredients are moist - do not over mix.
  5. Spoon into 24 paper lined cupcake tins.
  6. Bake at 350ºF for 25 - 35 minutes or until done.

What a marvelous recipe, Pink - I do believe I could eat these every day. Look at all the goodness in them...and I bet they are moist. *swoon* I must make these soon. They are my muffin destiny.

Hi there. Because of diabetic issues, my husband has to have whole grain not white flour. Does anyone know if I can subsitute whole wheat flour for the white flour in this recipe? Will they rise and be moist? I am an excellent cook, but new to whole grain cooking. Thanks


I assume you could use WW All Purpose Flour...try it!


OK, I did the whole grain thing. They worked out well, although a litle dense. I used 2 cups white whole wheat flour and 1 cup buckwheat flour. I would reduce the flours a little and they wouldn't be so dense. Delicious!!!!

Alterations


I made these muffins totally sugar free and whole grain. I used Splenda, sugar free applesauce, and pineapple in its own juice. To make these muffins whole grain, use 1-1/2 C white whole wheat flour, 1/2 C buckwheat flour, and 1/2 C oat flour (blend long cooking oatmeal in a blender til powder form). Served with a cup of coffe, these make a great breakfast (bet you can't eat just one!)
