I made these muffins totally sugar free and whole grain. I used Splenda, sugar free applesauce, and pineapple in its own juice. To make these muffins whole grain, use 1-1/2 C white whole wheat flour, 1/2 C buckwheat flour, and 1/2 C oat flour (blend long cooking oatmeal in a blender til powder form). Served with a cup of coffe, these make a great breakfast (bet you can't eat just one!)

Hi there. Because of diabetic issues, my husband has to have whole grain not white flour. Does anyone know if I can subsitute whole wheat flour for the white flour in this recipe? Will they rise and be moist? I am an excellent cook, but new to whole grain cooking. Thanks

OK, I did the whole grain thing. They worked out well, although a litle dense. I used 2 cups white whole wheat flour and 1 cup buckwheat flour. I would reduce the flours a little and they wouldn't be so dense. Delicious!!!!
