How to make it

  • Preheat oven to 300F, grease a cookie sheet.
  • Mix flour, oats, Splenda, sugar, baking soda, cinnamon and raisins in large bowl.
  • Grate carrots and add to bowl.
  • Add applesauce and juice, mix well.
  • Drop dough by heaping tablespoons onto sheet, about 2 inches apart.
  • Flatten dough into circles using a flour-dipped cup.
  • Bake 15 minutes.
  • Let set for two minutes on baking sheet before removing.

    mmm these are good, very moist. More cakey than cookie-y
    I had to add a little more juice and applesause to bring the mixture together.
    I also squeezed a fresh orange for juice instead of pineapple, as thats all i had.
    Boyfriend loved them :)

    Love all the ingredients in this recipe, oats the most. I will use whole spelt flour as it is the only one I use now, but the rest will remain the same. Thanks for sharing.

    Thanks so much for this recipe. Just on Easter Sunday I made carrot cookies from a cake mix with cream cheese frosting, but I wished I had a homemade recipe because I like to do things homemade. Now I have a homemade recipe and will definately try this one!
