Carrot cake, or cookies? Why not both? This has all the fruity goodness of the carrot cake you know and love but with a lot lower sugar and fat content. I like making sandwiches with plain or strawberry cream cheese in between them!

Ingredients
  • 1 1/4 cups whole wheat flour
  • 1 cup quick oats
  • 2 tbsp Splenda granular
  • 2 tbsp sugar
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/3 cup raisins
  • 3/4 cup grated carrots
  • 1/3 cup unsweetened applesauce
  • 1/4 cup pineapple juice

Directions
  1. Preheat oven to 300F, grease a cookie sheet.
  2. Mix flour, oats, Splenda, sugar, baking soda, cinnamon and raisins in large bowl.
  3. Grate carrots and add to bowl.
  4. Add applesauce and juice, mix well.
  5. Drop dough by heaping tablespoons onto sheet, about 2 inches apart.
  6. Flatten dough into circles using a flour-dipped cup.
  7. Bake 15 minutes.
  8. Let set for two minutes on baking sheet before removing.

Thanks so much for this recipe. Just on Easter Sunday I made carrot cookies from a cake mix with cream cheese frosting, but I wished I had a homemade recipe because I like to do things homemade. Now I have a homemade recipe and will definately try this one!


Love all the ingredients in this recipe, oats the most. I will use whole spelt flour as it is the only one I use now, but the rest will remain the same. Thanks for sharing.

Mmm these are good, very moist. More cakey than cookie-y
I had to add a little more juice and applesause to bring the mixture together.
I also squeezed a fresh orange for juice instead of pineapple, as thats all i had.
Boyfriend loved them :)

Alterations


1.) Did not use splenda or sugar instead used honey (about 4-5 TBSP) 2.) used rolled oats insted of quick, 3.) added about 1/2 TSP Baking Powder and added some all spice and some ground ginger!


I only used 3 Tbsp sugar, no splenda.
Would also be good with a few chopped walnuts thrown in.
