Mango Wrapped Thai Shrimp

- 1lb shrimp, shelled and deveined shopping list
- 2 limes, zest and juice shopping list
- 1 inch ginger, peeled and grated shopping list
- 2 African devil chilies, crushed shopping list
- 2 cloves garlic, minced shopping list
- 1 T peanut oil shopping list
- 1 T fish sauce shopping list
- 1 tsp sugar shopping list
- Pinch salt shopping list
- 1 mango shopping list
How to make it
- Combine all of the ingredients except the mango in a bowl and mix together. Cover and refrigerate for 20 minutes.
- Peel mango and then, using either a sharp peeler or knife, slice the entire mango into thin strips.
- Heat up a nonstick frying pan over med-high heat. Remove the shrimp from the marinade, add to the pan and fry until pink, 1-2 minutes. Remove the pan from the heat.
- Wrap a strip of mango around each shrimp and secure with a toothpick.

Made this a couple of nights ago and got good feedback. Definitely grill if you can, I broiled the shrimp and think a little more grill flavor would have enhanced the flavors. I might add a bunch of cilantro and maybe some more garlic next time. Tha...more
