Creole Mayonnaise

- 1 clove garlic, crushed. (consider using roasted garlic!) shopping list
- 1 egg shopping list
- 1 T stone-ground mustard shopping list
- 1 t salt shopping list
- 1/2 t ground cayenne pepper shopping list
- 2 T red wine vinegar shopping list
- 1 1/2 c vegetable oil (I like to use at least half olive oil) shopping list
How to make it
- I usually make mayonnaise in my blender rather than my food processor. Either one works fine, though.
- Combine all ingredients except oil in blender jar. Give them a quick blend to combine them.
- With the blender on it's lowest setting, slowly add the oil in a slow steady stream to form a nice smooth mayonnaise.
- As soon as all oil is incorporated, turn off the blender -- otherwise it will separate again.
- Move the mayonnaise into the refrigerator container of your choice.
- Makes about 1 1/2 cups.
