Creole Mayonnaise Recipe
This is serious stuff! It's great in Broiled Stuffed Shrimp, which I'll be posting soon.

Ingredients
  • 1 clove garlic, crushed. (consider using roasted garlic!)
  • 1 egg
  • 1 T stone-ground mustard
  • 1 t salt
  • 1/2 t ground cayenne pepper
  • 2 T red wine vinegar
  • 1 1/2 c vegetable oil (I like to use at least half olive oil)

Directions
  1. I usually make mayonnaise in my blender rather than my food processor. Either one works fine, though.
  2. Combine all ingredients except oil in blender jar. Give them a quick blend to combine them.
  3. With the blender on it's lowest setting, slowly add the oil in a slow steady stream to form a nice smooth mayonnaise.
  4. As soon as all oil is incorporated, turn off the blender -- otherwise it will separate again.
  5. Move the mayonnaise into the refrigerator container of your choice.
  6. Makes about 1 1/2 cups.
