Ingredients

1 lb. ground beef ( I use Deer Burger )

1 1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/2 cup chopped/minced onion

1/2 cup chopped/minced bell pepper

1/2 cup chopped/minced celery

1 egg, lightly beaten

8 oz. canned diced tomatoes with juice

1 pack of Lipton Beefy Onion Soup Mix

Topping:

1/3 cup ketchup

2 tablespoons brown sugar

Directions

Preheat oven to 375 degrees F.

Mix all meat loaf ingredients well and place in a baking dish.

Shape into a loaf.

Topping:

Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Well, I can see why this recipe converted you to meatloaf! It's a fine recipe -- my hats off to you! You really got me with the ketchup and brown sugar topping -- it's my favorite! If you want to spice up that topping -- had a couple of dashes of Tabasco and Worcestershire sauce to it ;-)
