Easy Japanese Eel Unagi Stir-fry Recipe

A dish I whipped up because I didn't feel like having normal 'unadon'. You can serve this with or without rice, or toss this with cooked udon noodles. This was healthy and so easy I wondered why I never did this more often!

Ingredients
  • 100g Unagi (Japanese Eel) - available in Asian Grocers (freezer section)
  • 1 small Carrot - julienned
  • 100g String Beans - halved
  • 1/2 Small Onion
  • For the sauce (Kabayaki):
  • 3 Tbsp Mirin
  • 1 Tbsp Soya Sauce or Tamari
  • 1 Tbsp Sake (or any rice wine)

Directions
  1. Cut unagi into bite-sized pieces.
  2. Heat oil in skillet/pan and fry onions for 1 minute or until slightly translucent.
  3. Add beans and carrots and 'dry fry' for about 3-4 minutes on medium heat.
  4. Toss in the unagi pieces and stir-fry til the fish looks thawed.
  5. Drizzle the Kabayaki sauce over fish and vegetable and simmer til it bubbles.
  6. Stir everything in pan for a couple of seconds to coat - you will see that the sauce has thickened.
  7. Transfer to a plate or bowl and serve. EASY!

My boy will LOVE this - he's such an unagi fan. Think I'll teach him to do this, sounds easy enough. Great recipe, thanks :)


I think u can be inventive by using shiitake or enoki mushrooms, and even bell peppers. I might try adding mushrooms the next time I cook this. =]
