Ingredients
  • For Vinaigrette:
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup fresh orange juice-about 1 orange
  • 1 Tbls. olive oil
  • 2 Tbls. balsamic vinegar
  • 1/2 tsp. sugar (or more if needed)
  • 1 tsp. peeled fresh minced ginger
  • 1/4 tsp. sea salt
  • For Salad:
  • 18 romaine leaves (about 2)
  • 2 pears peeled and sliced
  • 2 Tbls. orange juice
  • 1 cup sliced red onion
  • 1/3 cup crumbled blue cheese
  • 2 Tbls. toasted walnuts coarsely chopped

Directions
  1. For Vinaigrette:
  2. Place all ingredients in a medium sized bowl and whisk well.
  3. Salad:
  4. Divide lettuce leaves evenly on 6 salad plates
  5. toss pears with 2 Tbls. orange juice
  6. Divide pears and onions on plates
  7. top each serving with 1 Tblsp. cheese and walnuts
  8. top with 2 1/2 Tbls. vinaigrette.....Enjoy

I like the salad...I love the vinaigrette! Canned cranberry sauce? That will have to become a staple dressing. I have some cassis vinegar that this would go perfect with! Thanks!
