Carrot and Almond Cake or Muffin

- 150 g butter shopping list
- 150 g brown sugar shopping list
- 1 tsp vanilla essence shopping list
- 2 Medium eggs shopping list
- 150 g Grated carrot shopping list
- 80 g roasted almonds , chopped shopping list
- 180 g self raising flour , sifted shopping list
How to make it
- Grease a 20 cm pan or 6 muffin pans .
- Pre heat oven at 180 degrees .
- Beat the butter and sugar until fluffy .
- Add eggs one at a time .
- Fold in the carrots , almonds , spices and flour .
- Pour the batter into the cake pan and bake for 50 mins , or
- into the muffin pan and bake 25 minutes .
