How to make it

  • Preheat oven to 400˚.
  • Cut tops off tomatoes.
  • Using a spoon, scoop out the insides and discard (or save for another recipe).
  • Sprinkle lightly with salt and turn upside down on a paper towel to drain for about 10 minutes.
  • Combine remaining ingredients, and fill tomatoes.
  • Top with a little more Parmesan.
  • Bake 15-20 minutes.
