Pizza Flatbread Recipe
Crispy, crunchy flatbread that is nice with dinner, as an appetizer or with wine or beer.

Ingredients
  • 1 1/2 cups warm water
  • 1 package active dry yeast
  • 1/4 cup extra virgin olive oil (and extra for tops of bread)
  • 2 tablespoons Italian seasoning
  • 1/2 cup Parmesan cheese, grated (and extra for sprinkling on top)
  • 2/3 cup pepperoni slices, ground in food processor
  • 1 teaspoon garlic salt

Directions
  1. In large mixing bowl, dissolve yeast in water. Add 1/4 cup olive oil, Italian seasoning, parmesan cheese, pepperoni and garlic salt. Mix well. Add flour and mix well by hand.
  2. Knead dough on lightly floured surface until smooth. Place dough in olive oiled large bowl and cover with damp cloth. Let dough rise until double in size, about 1 hour.
  3. Preheat oven to 400.
  4. Punch down dough, turn onto lightly floured surface and divide into 16 pieces. Round out each piece using fingers and flatten each until VERY thin. Rub a little olive oil on each and sprinkle with parmesan. Place dough on parchment lined baking sheet or baking stone and bake for 18 minutes. Remove and cool on rack.
