How to make it

  • In large mixing bowl, dissolve yeast in water. Add 1/4 cup olive oil, Italian seasoning, parmesan cheese, pepperoni and garlic salt. Mix well. Add flour and mix well by hand.
  • Knead dough on lightly floured surface until smooth. Place dough in olive oiled large bowl and cover with damp cloth. Let dough rise until double in size, about 1 hour.
  • Preheat oven to 400.
  • Punch down dough, turn onto lightly floured surface and divide into 16 pieces. Round out each piece using fingers and flatten each until VERY thin. Rub a little olive oil on each and sprinkle with parmesan. Place dough on parchment lined baking sheet or baking stone and bake for 18 minutes. Remove and cool on rack.
