Vegetables Pasta and Beans Mild Curry

- 4 Tbsp Extra Virgin spanish olive Oil shopping list
- 1/2 onion, chopped shopping list
- 2 leeks, chopped shopping list
- 1 pound frozen mixed vegetables (your choice), unthawed shopping list
- 3 small zucchini, chopped shopping list
- 1 8 oz can chopped tomatoes shopping list
- 1 8 oz can red kidney beans shopping list
- 1 tsp vegetable bouillon (can omit) shopping list
- 2 Tbsp mild curry powder (your choice, I used masala) shopping list
- 1 cup whole wheat short pasta such as macaroni, shells... shopping list
- 2-3 cups water or vegetable stock shopping list
- salt and pepper shopping list
How to make it
- Heat oil in a casserole. Add onion and leeks. Stir well and let cook 2 minutes. Add mixed vegetables and zucchini, tomatoes, beans, bouillon and curry powder. Mix well and cook 10 minutes.
- Add pasta and water to casserole. Season with salt and pepper. Let cook 10-12 minutes more on low heat until pasta is cooked. You can add more water or stock if it becomes too thick.
- Add a little fresh grated cheese on top if you like.
