Vegetables Pasta And Beans Mild Curry Recipe

Ingredients

4 Tbsp Extra Virgin Spanish Olive Oil

1/2 onion, chopped

2 leeks, chopped

1 pound frozen mixed vegetables (your choice), unthawed

3 small zucchini, chopped

1 8 oz can chopped tomatoes

1 8 oz can red kidney beans

1 tsp vegetable bouillon (can omit)

2 Tbsp mild curry powder (your choice, I used Masala)

1 cup whole wheat short pasta such as macaroni, shells...

2-3 cups water or vegetable stock

Salt and pepper

Directions

Heat oil in a casserole. Add onion and leeks. Stir well and let cook 2 minutes. Add mixed vegetables and zucchini, tomatoes, beans, bouillon and curry powder. Mix well and cook 10 minutes.

Add pasta and water to casserole. Season with salt and pepper. Let cook 10-12 minutes more on low heat until pasta is cooked. You can add more water or stock if it becomes too thick.

Add a little fresh grated cheese on top if you like.
