Smashed Potatoes With Bacon

- 1 1/2 lbs. new potatoes, quartered shopping list
- 8 tbs. (1 stick butter) cubed shopping list
- salt shopping list
- 1/2 cup heavy cream shopping list
- 1 lb. of crispy bacon, chopped shopping list
- 1/2 cup sour cream shopping list
- 2 tbs snipped fresh chives shopping list
How to make it
- Put the potatoes in a pan and cover with salted water.
- Bring pan to a boil and reduce to a simmer.
- Cook the potatoes until fork tender, about 10 minutes.
- Drain potatoes well.
- Add the butter and cream.
- Mash the potatoes until slightly smooth.
- Add the bacon, chives and sour cream.
- Season with salt and pepper to taste.
