Ingredients
  • (1-lb) dried white beans
  • 1-tspn salt
  • 4-cups water
  • 3 links Andouille sausage, sliced
  • 3-stalks celery, chopped
  • 1/4-cup lentils
  • 1-tspn. Ground black pepper
  • 2-tbspn. minced garlic
  • 1-onion, chopped
  • 10-oz(can) Rotel tomatoes

Directions
  1. Soak what beans overnight.
  2. Drain and place in slow cooker; add lentils, salt, pepper, water, garlic, sausage, onions, celery and tomatoes.
  3. Cook on high for 9 hours and on low for 2 hours.
  4. NOTE: This is good served over hot cornbread with a side salad.
