I'll admit, not quite as good as the real thing, but when you're dieting it's wonderful. Cook an extra couple minutes if you prefer a dry cake.

Ingredients
- 4 oz unsweetened baking chocolate
- 1/2 cup butter
- 1 1/4 cups powdered sweetener (I use Splenda)
- 2 eggs, lightly beaten (organic & free range)
- 2 egg yolks
- 1 t brandy
- 6 T low carb baking mix (I use a combo of oat flour, soy flour and wheat gluten flour)
- Homemade unsweetened whipped cream to top
Directions
- Preheat oven to 425F
- Grease 4 custard cups with a little butter
- In a microwaveable bowl, heat butter and chocolate squares on high for 1 minute or until butter is completely melted
- Remove bowl from microwave and stir until chocolate is completely melted
- Stir in sweetener until combined
- Stir in eggs, yolks and brandy until combined
- Stir in baking mix until well blended
- Divide batter evenly between 4 custard cups
- Bake 10-13 minutes, or until sides are firm but centre is soft.
- Let stand 1 minute, then turn out onto plate. Top with whipped cream

Good to hear it and congrats! My husband and I are both eating low-carb this year. I've previously lost 60 lbs this way and he's lost 30 lbs since January!
