Cinnamon Wind-ups Recipe

Ingredients

1/2c oil

1/2c granulated sugar

1/2c orange juice

2 eggs

2-21/2c all-purpose flour

2tsp baking powder

1/4tsp salt

11/2tsp cinnamon

3/4c brown sugar

3/4c rasins or currants or chocolate chips or chopped nuts

Directions

Mix cinnamon, brown sugar and currants in a small bowl, set aside.

Beat together oil, sugar, eggs and orange juice

Sift together flour, baking powder and salt.*

Add to oil mixture, mix until flour is absorbed.

Divide dough into 2 balls. Chill for about 1 hour.

Roll each ball into a rectangle about 1/4'' thick.

Spread evenly with brown sugar and cinnamon mixture.

Roll tightly. Cut into 1/2'' slices. Place on lined or greased baking sheet.

Bake at 350F for 15-20 mins.

*If you use the smaller amount of flour the dough will be a bit sticky but it will make these cookies more biscuit like.
