Ham Loaf Recipe
This is a Pittsburgh traditional, old-fashioned recipe. JUST what to do with leftover Easter or Christmas ham! If you like meatloaf, you will LOVE hamloaf!

Ingredients
  • 1 1/2 pounds ground pork, or use combination of pork and veal - I do
  • 1 1/2 pounds ham, ground (grind finely in food processor)
  • 1 cup milk
  • 2 eggs
  • 1 cup fresh bread crumbs
  • pepper, to taste
  • 16 ounces pineapple rings in juice

Directions
  1. Mix the meats, milk, eggs bread crumbs and pepper until well combined. Shape into a loaf (if you're serving a lot of people at one time) or into 2 loaves (cook both and wrap and freeze one for later). Decorate tops with pineapple rings reserving juice.
  2. Bake at 350 until done (maybe an hour, maybe longer - you'll know by the look) basting occasionally with pan juices or reserved pineapple juice.
  3. NOTE: To make this gluten-free, use gluten-free bread to make the breadcrumbs. NO difference in taste whatsoever.
  4. NOTE: In Pittsburgh you can buy ground ham. Not so in other cities. I tried to find it in Baltimore and was told they couldn't grind ham because the salt in it would corrode the equipment. So that's how I discovered you can do it yourself in the food processor. It is a snap!

I didn't realize you couldn't buy the ham in different places. My mother lives about an hour from State College and she can find it, but it isn't available in Carlisle, PA! Go Figure!!

My mother's recipe calls for a brown sugar syrup, but I like the idea with the pinapple!
