Ham Loaf

- 1 1/2 pounds ground pork, or use combination of pork and veal - I do shopping list
- 1 1/2 pounds ham, ground (grind finely in food processor) shopping list
- 1 cup milk shopping list
- 2 eggs shopping list
- 1 cup fresh bread crumbs shopping list
- pepper, to taste shopping list
- 16 ounces pineapple rings in juice shopping list
How to make it
- Mix the meats, milk, eggs bread crumbs and pepper until well combined. Shape into a loaf (if you're serving a lot of people at one time) or into 2 loaves (cook both and wrap and freeze one for later). Decorate tops with pineapple rings reserving juice.
- Bake at 350 until done (maybe an hour, maybe longer - you'll know by the look) basting occasionally with pan juices or reserved pineapple juice.
- NOTE: To make this gluten-free, use gluten-free bread to make the breadcrumbs. NO difference in taste whatsoever.
- NOTE: In Pittsburgh you can buy ground ham. Not so in other cities. I tried to find it in Baltimore and was told they couldn't grind ham because the salt in it would corrode the equipment. So that's how I discovered you can do it yourself in the food processor. It is a snap!
