Rhubarb Coolers

- 3 lbs fresh or frozen rhubarb, chopped (about 10 cups) shopping list
- 2 qts water shopping list
- 1 T grated orange peel shopping list
- 2 c sugar shopping list
- 1/2 c lemon juice shopping list
- 1/2 c orange juice shopping list
- 1/8 t salt shopping list
- 6 cups chilled lemon-lime soda shopping list
How to make it
- In a dutch oven, bring rhubarb, water and orange peel to a boil. Reduce heat; simmer, uncovered, for 10 - 15 min or until rhubarb is very tender. Cool slightly. Strain through cheesecloth; discard pulp.
- Return liquid to the pan Stir in sugar, lemon juice, orange juice and salt. Cook and stir over medium heat till sugar dissolves. Cover and refrigerate until well chilled.
- To serve, pour 2/3 c rhubarb mixture over ice; add 1/3 c soda.
- Makes 3 qts.
