Pistachio Pudding Cupcakes

Vanilla cupcakes stuffed with creamy pistachio pudding
Ingredients
- 1 box vanilla/ yello cake mix shopping list
- 3 eggs shopping list
- 1/4 cup oil shopping list
- 1/4 cup water shopping list
- 1 box pistachio pudding mix shopping list
- 2 cups cold milk or half and half shopping list
- i container creme cheese icing shopping list
- green food coloring shopping list
- 1 cup chopped pistachios shopping list
How to make it
- Mix together cake mix, water, eggs and oil
- Add to cupcake tins (makes apporox 20 cupcakes)
- Bake for 25 min at 350 degrees
- Let cupcakes cool
- Scoop a small hole out of the center of each cupcake
- Mix pistachio pudding and milk together for 2 min
- Pour pudding into pastry bad and cut tip of bag
- Fill each cupcake with pudding
- Add very teeny, tiny amount of green food coloring to cream cheese icing (creates a pastel green) MIx...
- Add icing to pastry baga and pipe onto cupcakes
- Chop up 1 cup pistachios
- Sprinkle over cupcakes
- Taaa Daaaa! All done!
