Why not consider liquid eggs. They are pasteurized and much safer. 1/4 cup equals a whole egg. WalMart and Sams stock them as well as many groceries. If not find a local restaurant what will order them from Sysco or US Foodservice for you. You can freeze what you don't need immediately. Much easier and much safer. Some eggs today have Salmonella inside the shell. Eggs today aren't as safe as they were a decade ago.

They don't refrigerate eggs in the UK (where I am living at the moment)! It's amazing that more people aren't ill. I did a food handler's course a while back and they didn't seem concerned about it. I still can't believe it!

Wow! This is really impressive! It reminds me of when I was younger, every once in a while, the church we went to would have breakfasts. That was a lot of people --And a lot of eggs! What a nice memory --Thank you!!

Only 11 dozen eggs? Wow!!! Oh Dottie, thank you! I wonder just how many potatoes it takes to make hashbrowns for all these people? You must be one incredible cook! Thank you for all your wonderful recipes!
