Ingredients
  • 1 Can of salmon; drained with skin and bones removed
  • Crisp lettuce
  • Tomato Slices
  • 2 Slices of bacon
  • 2 Slices of buttered toast
  • Sliced Cucumber
  • Sliced Radish
  • Sliced Scallions
  • Dill pickle spear
  • Salt and pepper to taste

Directions
  1. Flake the remains of salmon, place is collander and heat slightly over boiling water.
  2. Broil bacon slices until crisp, and then tomato slices for 2 minutes.
  3. For each serving, arrange crisp lettuce, then salmon flakes on top of toasted buttered bread.
  4. Top with 2 slices of bacon and one slice of tomato.
  5. Repeat the process after covering with a second piece of toast, seasoning each layer to taste with salt and pepper.
  6. Top the sandwich with a slice of cucumber, seasoned to taste and garnish with scallions, radishes, and dill pickle spear. Serve at once.
  7. **I recommend you use smoked salmon butter for the toast to add a bit of smokeyness to the layers of flavor. See recipe for smoked salmon butter.**
