Crispy flourless almond cookie. It is better tasting the next day!

Ingredients
- 4 c blanched almonds
- 2 c gradulated sugar
- 4 egg whites
- 1 tsp cream of tartar
- 2 tsp almond extract
- confectionary sugar
Directions
- Grind or process almonds and sugar. Set aside.
- Beat egg whites with cream of tartar untl stiff.
- Add almond extract and continue beating.
- Fold in almond sugar.
- Drop by tablespoon onto parchment paper.
- Sprinkle with some confectionary sugar and wait 2 hours at room temperature.
- Bake at 300 degrees for 20 minutes.
