Halibut with White Beans in Tomato-Rosemary Broth

- 1 tbsp olive oil shopping list
- 4 (6 ounce) halibut fillets shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp freshly ground pepper shopping list
- 2 garlic cloves minced shopping list
- 1 1/2 cups vegetable broth shopping list
- 2 cups chopped plum tomatoes (about 4) shopping list
- 1/2 cup white wine shopping list
- 1 can (16 ounce) cannellini white beans, drained and rinsed shopping list
- 1/2 tsp chopped fresh or dried rosemary shopping list
How to make it
- heat oil in skillet
- season fish with salt and pepper
- cook in pan on medium heat for 5 minutes on each side, or until flakes easily with fork
- remove and cover fish
- add garlic to pan, cook 30 seconds
- add all other ingredients expect for fish and bring to a boil
- simmer for 5 minutes.
- ladle into soup bowls and place fish on top.
