Halibut With White Beans In Tomato-Rosemary Broth Recipe

Ingredients
  • 1 tbsp olive oil
  • 4 (6 ounce) halibut fillets
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • 2 garlic cloves minced
  • 1 1/2 cups vegetable broth
  • 2 cups chopped plum tomatoes (about 4)
  • 1/2 cup white wine
  • 1 can (16 ounce) cannellini white beans, drained and rinsed
  • 1/2 tsp chopped fresh or dried rosemary

Directions
  1. heat oil in skillet
  2. season fish with salt and pepper
  3. cook in pan on medium heat for 5 minutes on each side, or until flakes easily with fork
  4. remove and cover fish
  5. add garlic to pan, cook 30 seconds
  6. add all other ingredients expect for fish and bring to a boil
  7. simmer for 5 minutes.
  8. ladle into soup bowls and place fish on top.
