How to make it

  • Put flour, salt and pepper in a large plastic bag. and shake to mix. Shake chicken pieces in flour mixture. Melt butter and oil in electric skillet and brown chicken well on all sides. Remove chicken to platter.
  • Add onion, green and red peppere, garlic and curry powder to drippings remaining. Stir until veggies are soft. Stir in tomatoes, crushing with a fork and the raisins. Bring to boil.
  • Return chicken to sauce and simmer, covered, for an hour or so.
  • To serve Arrange chicken on serving platter; spoon some sauce over chicken. Make rice and spoon around edge of platter and serve the remaining sauce in a boat.
  • NOTE: Serve with steamed rice and a veggie.
  • NOTE: To make this gluten-free, leave out the flour and saute the chicken naked. (The chicken should be naked, not YOU!)

    A favorite in our family! Learned to make it many years ago in Columbus, Georgia! Absolutely wonderful!! Our dinner guests always love it.

    Good point! You never want to saute anything while nakey! Those splatters are nasty LOL! ;o)
