My Macaw Muffins

- PAM shopping list
- 1/2 cup Kamut flour shopping list
- 1/4 cup whole wheat flour shopping list
- 1/4 cup oatmeal shopping list
- 1 cup yellow cornmeal shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp stevia extract shopping list
- 1 tbsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 2.5 oz silken, low-fat tofu shopping list
- 1 egg shopping list
- 2 tbsp canola oil shopping list
- 1 tbsp soy lecithin granules shopping list
- 1/4 cup peanut butter (chunky or smooth) shopping list
- 3/4 cup buttermilk shopping list
- 1 carrot, minced shopping list
- 1 apple, skin on, minced shopping list
- 1/2 cup raisins shopping list
How to make it
- Preheat oven to 400F and grease muffin tins.
- Whisk together dry ingredients in a large mixing bowl.
- In a food processor, puree tofu, egg, oil, and lecithin until smooth.
- Add peanut butter and buttermilk and pulse just to mix.
- Add this mixture to the dry ingredients and stir just to incorporate.
- Fold in carrot and apple pieces, and raisins.
- Bake 20 minutes. Remove from tins immediately and cool on wire racks.
