Pork Chop Dinner Casserole Recipe
This one-dish casserole is a great way to serve pork chops. Good enough for dinner guests or your family dinner. Try something new when serving pork chops.

Ingredients
  • 4 bone in pork chops
  • 2 cups of cooked rice
  • 2 t. garlic powder
  • salt and pepper to taste
  • 2 T EVOO (Extra Virgin Olive Oil)
  • 1 med. onion sliced and ringed
  • 1 green pepper sliced
  • 1 red pepper sliced
  • 2 - 3 fresh tomatos, sliced

Directions
  1. Prepare long cooking rice in your rice cooker or on the stove top as
  2. usual.
  3. Prehaeat oven to 350 degrees.
  4. Season the pork chops with the garlic powder, salt and pepper.
  5. Pre-heat your non-stick skillet using the EVOO.
  6. Brown chops on each side on med. high heat.
  7. Remove from pan and place into oven-proof casserole dish.
  8. Saute the onions and peppers just until they begin to release their natural juices and turn bright colored (they will be crispy but slightly browned).
  9. Deglaze the pan by using 4 T of water, reducing slightly and pour over vegtables.
  10. Place the rice over the chops and vegtables.
  11. Cover top of rice with the tomatos.
  12. Bake for 30 min. covered.
  13. Serve by placing the vegtables and rice on your plate and placing the chop on top with some of the natural juices in the pan.
