How to make it

  • Heat oven to 350°F. Cook ground beef in 10-skillet over medium heat, stirring occasionally, until browned (5 to 8 minutes). Drain off fat.
  • Stir in rice, soup, chiles and taco seasoning mix. Spoon into ungreased 12x8-inch baking pan.
  • Top with tomatoes, cheese and corn chips. Bake for 30 to 35 minutes or until heated through.

    This was very good and my kids really liked it. Instead of using the chopped tomatoes and can of green chili's I used 2 cans of rotel tomatoes. Just so we had plenty of leftovers I did use 1.5# of beef and increased the rice a bit too. Topped it off with some sour cream! It turned out great!

    Made this tonight and it was AMAZING! Instead of using chopped up tomatoes (we're not too fond of tomatoes) I used about a cup of salsa and Used a 10 oz can of diced tomatoes with green chilies. Topped with corn chips & cheese. My husband who is a very very very picky eater rated this a 5! Writing this down on an index card and putting in my recipe box!

    I work the 3-11 shift and always have dinner made ahead for my hubby and kids. This looks like a winner! All he'll have to do is stick it in the oven...I'll be trying it this week!

    I made it and it was delicious! I made a few modifications, only because we have a limited budget. You've got to work with what you've got, right? I didn't have green chiles, so I reduced the amount of soup by 1/4 and I added 1/4 cup mild salsa. This added a nice balance to the dish. To save time and money I bought a 10 oz bar of cheddar cheese and cut 3/4 of it into thin slices instead of shredded cheese (expensive) and put on top of the hamburg mixture. I layered the tomatoes, and then the crumbled white corn chips. Delicious!! We both had seconds and will take it for lunch tomorrow. Thanks so much for the great recipe!
