How to make it

  • Place beans in 1 inch water in 2-quart saucepan. Heat to boiling; reduce heat. Simmer uncovered 10 to 15 minutes or until crisp-tender. Drain. Immediately rinse with cold water. Drain.
  • Cook bacon in 10-inch skillet over medium-high heat until crisp. Remove bacon from skillet reserving 1 tablespoon fat in skillet. Drain bacon on paper towels.
  • Cook onion in bacon fat over medium heat, stirring occasionally until tender. Stir in tomato, garlic, oregano, salt and pepper. Simmer uncovered 5 minutes. Stir in beans and heat through. Drizzle with lemon juice. Garnish with crispy bacon pieces.
