Arlen Green Beans

- 1 pound fresh green beans, cut into 1-inch pieces shopping list
- 4 slices bacon, cut into 1 inch pieces shopping list
- 1 medium onion, chopped (1/2 cup) shopping list
- 1 medium tomato, chopped (3/4 cup) shopping list
- 1 clove garlic, finely chopped shopping list
- 1 teaspoon chopped fresh or 1/2 tsp dried oregano leaves shopping list
- 1/2 teaspoon salt shopping list
- Dash of pepper shopping list
- 2 tablespoons lemon or lime juice shopping list
How to make it
- Place beans in 1 inch water in 2-quart saucepan. Heat to boiling; reduce heat. Simmer uncovered 10 to 15 minutes or until crisp-tender. Drain. Immediately rinse with cold water. Drain.
- Cook bacon in 10-inch skillet over medium-high heat until crisp. Remove bacon from skillet reserving 1 tablespoon fat in skillet. Drain bacon on paper towels.
- Cook onion in bacon fat over medium heat, stirring occasionally until tender. Stir in tomato, garlic, oregano, salt and pepper. Simmer uncovered 5 minutes. Stir in beans and heat through. Drizzle with lemon juice. Garnish with crispy bacon pieces.
