  • 2 tablespoons butter or margarine
  • 1 (3-ounce) package chicken or spicy flavored ramen noodles
  • 2 tablespoons sesame seeds
  • 1/4 cup sugar
  • 1/4 cup white vinegar
  • 1 tablespoon sesame or vegetable oil
  • 1/2 teaspoon black pepper OR ΒΌ tsp white pepper
  • 2 cups cooked chicken, cubed
  • 1/4 cup dry-roasted peanuts (optional)
  • 4 medium spring onions, sliced (1/4 cup)
  • 1 red chili pepper, chopped (remove seeds if you do not want the salad very spicy)
  • 1 (16-ounce) bag coleslaw mix
  • 1 (11-ounce) can mandarin oranges segments, drained

Directions
  1. Melt butter in 10-inch skillet over medium heat. Stir in seasoning packet from soup mix. Break block of noodles into bite-size pieces over skillet; stir into butter mixture.
  2. Cook 2 minutes, stirring occasionally. Stir in sesame seed. Cook about 2 minutes longer, stirring occasionally, until noodles are golden brown; remove from heat.
  3. Mix sugar, vinegar, oil and pepper in large bowl. Add noodle mixture and remaining ingredients; toss, and serve.
