This is an amazing recipe for apple pie. It was passed along to me from a friend who has made the recipe for years.

  • This is a two crust pie.
  • For Crust:
  • 2 cups all purpose bleached flour
  • 2/3 cups solid shortening
  • *I use half shortening and half butter
  • 1/4 cup ice water, add 1 Tablespoon at a time
  • 1 teaspoon salt
  • Stir flour and salt together. With a pastry blender, thoroughly mix in the shortening. I add two tablespoons of ice water to begin with. Stir with a fork, and then add enough ice water so that dough sticks together but is not overly wet. The amount of water needed will depend on the season and humidity in the air. Add more, or less, as desired.
  • Divide dough in half.
  • Place one dough ball, flattened by hand on top, onto a floured surface. Sprinkle a little flour on top of the dough and then roll it out, larger than the pie plate that you are using.
  • When the dough is rolled to the desired size, fold it in half, for easy placement into the pie plate. I like to use a glass pie plate for baking apple pies. They seem to come out better. Place the other half of dough aside for top crust.
  • FILLING:
  • 3 cups sliced apples (your choice of apples but I prefer Spy)
  • 1-1/2 cups brown sugar
  • 2/3 cup water
  • 1 Tablespoon lemon juice
  • 3 Tablespoon flour
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 3 Tablespoons butter

Directions
  1. In large saucepan, mix brown sugar and water.
  2. Add lemon juice and apples.
  3. Cover and cook for about 15 minutes or until apples are tender. Remove apples with a slotted spoon and place them in a bowl putting them aside.
  4. Add flour and granulated sugar to saucepan, stir and cook until well-blended.
  5. Add butter, vanilla, cinnamon and apples.
  6. Cool for awhile.
  7. Add to the crust in pie plate.
  8. Roll out remaining dough and add top crust.
  9. Make a few air vents by cutting top crust with a knife, or use a pie bird in the center of the pie.
  10. Bake at 400 degrees if using an aluminum pie plate, for 10 minutes, or at 375 degrees, if using a glass pie plate.
  11. Reduce heat to 375 degrees, or 350 degrees and bake for 25 minutes more.
  12. Serve with vanilla ice cream or fresh whipped cream and slices of cheddar cheese.

This sounds similar to my Award Winning Apple pie. There's nothing like a slice of warm apple pie with ice cream!! Yummy


I have a question about step 4. Are you adding the flour to thicken the sugar solution in this step or just to get the flour dissolved in the sugar solution? Can I use cornstarch instead of the flour?
