How to make it

  • In a medium saucepan combine the rice with the carrots, water and salt.
  • Bring to a boil, reduce heat and cover.
  • Simmer for 25 minutes. Do NOT drain!
  • Beat eggs.
  • Stir in the 1 1/2 cups cheese, milk, beaten eggs, onion and pepper.
  • Spoon mixture into a 1 1/2 quart baking dish.
  • Bake uncovered at 350 for about an hour.
  • Top with the 1/2 cup cheese and return to oven for about 2 minutes, just long enough to melt the cheese.
