Golden Carrot Bake

- 3 cups shredded carrots (about a pound) shopping list
- 1 1/2 cups water shopping list
- 2/3 cup long-grain or converted rice (not Minute Rice!) shopping list
- 1/2 tsp salt shopping list
- 1 1/2 cups shredded cheese (cheddar is good, use your favorite) shopping list
- 1 cup milk shopping list
- 2 eggs shopping list
- finely minced onion to taste (optional) shopping list
- 1/4 tsp pepper shopping list
- 1/2 cup shredded cheese shopping list
How to make it
- In a medium saucepan combine the rice with the carrots, water and salt.
- Bring to a boil, reduce heat and cover.
- Simmer for 25 minutes. Do NOT drain!
- Beat eggs.
- Stir in the 1 1/2 cups cheese, milk, beaten eggs, onion and pepper.
- Spoon mixture into a 1 1/2 quart baking dish.
- Bake uncovered at 350 for about an hour.
- Top with the 1/2 cup cheese and return to oven for about 2 minutes, just long enough to melt the cheese.
