How to make it

  • For the sauce:
  • Melt 4 T butter and saute green onions, parsley and garlic until onions are wilted. Add the seafood and let all fry until sizzling hot. Heat a small pot and pour in the brandy. Remove the seafood from heat, ignite the brandy and stir into the seafood mixture stirring until the flames go out. Set aside.
  • In another pot, melt 8 T butter then add flour and let cook on low heat until flour is cooked stirring often. Add the cream, milk and tomato paste and stir constantly until sauce comes to a boil and starts to thicken. Add the wine, lemon juice worchestershire and seasonings.
  • Combine both pans and simmer for a few minutes. Thin out with more milk if necessary.
  • For the stuffing:
  • Melt the butter and fry onions, green onions, celery, peppers, garlic and parsley until wilted. Add seafood, lemon juice, bay leaves and thyme. Let all this cook for 10-15 minutes until vegetables are cooked. Add bread crumbs, salt, pepper and hot sauce. Cook for 10 minutes stirring often. Add egg and mix well.
  • Stuff manicotti carefully and lay in baking dish. Pour sauce over manicotti and bake at 350 for 35-40 minutes. Spoon any remaining sauce over manicotti when served.
