Ingredients
  • 1 lb little neck clams
  • 6-7 sprigs of Thai basil, chopped
  • 3 little red chilies, seeded and chopped
  • 2 cloves of garlic, finely minced
  • 1 tbsp rice wine
  • 2 tsp Fish sauce
  • salt and pepper
  • 1 tsp peanut oil

Directions
  1. Clean clams, drain and set aside.
  2. In a heated pan add peanut oil and stir fry garlic until fragrant.
  3. Toss in the clams and stir continuously for about 1 minute.
  4. Add in red chilies, basil leaves and wine and continue to stir for 3 - 5 minutes, or until the shells open.
  5. Add some fish sauce to taste.
  6. Serve immediately.
