Sweet and Spicy Grilled Plantains

- 2 very ripe plantains shopping list
- 1/2 cup cream of coconut shopping list
- 2 Tbs fresh lime juice shopping list
- 1 tsp grated lime zest shopping list
- salt and pepper to taste shopping list
- 1/2 cup sweet flaked coconut toasted ( garnish ) shopping list
How to make it
- Peel plantains and cut lengthwise in half.
- Place halves on greased grill rack. Cover and grill medium high heat about 5 minutes on each side or until they are lightly charred.
- Stir together remaining ingredients and drizzle over the heated charred plantains.
- Sprinkle with the toasted coconut
- Note: Increase recipe for desired amounts of servings.

These sound wonderful and tropical. When I was little my mother used to fry plantains and bananas using different recipes. It was always a treat for us.
