Cherry Tiramisu

- 1 cup ricotta cheese shopping list
- 1 cup confectioners sugar shopping list
- 1/4 cup sour cream shopping list
- 1/4 cup coffee liqueur shopping list
- 30 two-inch shortbread cookies, crumbed (about 1½ cups) shopping list
- 1 twenty-one ounce can cherry pie filling (add some almond flavoring for better taste) shopping list
- sweet chocolate squares, grated for garnish shopping list
- Cool Whip shopping list
- fresh mint, for garnish shopping list
How to make it
- In a large mixing bowl, combine ricotta cheese, confectioners' sugar, sour cream and coffee liqueur; mix well. Set aside.
- In an electric blender or food processor, process the cookies in small batches until finely crushed.
- Remove 6 cherries from cherry filling; reserve for garnish.
- To assemble dessert, spoon 2 tablespoons ricotta cheese mixture into each of six (8-ounce) parfait glasses. Add 2 tablespoons cookie crumbs to each glass; top each with 2 tablespoons cherry filling. Repeat ricotta, crumb and cherry layers. Finish each serving with an equal portion of the remaining ricotta cheese mixture.
- Garnish with a dollop Cool Whip a reserved cherries on top of that, and grated chocolate with mint leaves, if desired. Let chill 2 to 3 hours before serving.

Ive had tiramisu only a couple of times on a cruise but this sounds good with the cherry in it
