Italian Meatballs  Reg And Gluten Free Recipe
this is my version of Italian style meatballs... I make it Gluten Free but it's just as easy to make it regular...the prep time does not include the hour to meld the flavors

Ingredients
  • 1 1/2 lb. 90% lean ground beef...
  • 2 large eggs
  • 1 TBSP. minced dried onions
  • garlic powder..... to taste
  • salt and pepper .....to taste
  • 1 teasp. oregano
  • Spice Island's Pasta and Pizza Seasoning.....Italian Blend ( this comes in a bottle that has a grinder... I set it on fine) You can get this at Sam's Club.... approx.. 1/3 - 1/2 teasp.
  • 2 TBSP.. of parsley ... i rub it between my palms to make it fine
  • 4 shakes of Lawer's season salt .....or to taste
  • 1/4 cup your favorite spaghetti sauce
  • 1/4 cup parmesan cheese
  • dry plain bread crumbs...... reg. or Gluten Free

Directions
  1. beat the 2 eggs in a large bowl
  2. add the dried minced onions.... this allows the onions to start to soften
  3. add spices and mix well
  4. add the spaghetti sauce and the cheese... mix well
  5. add enough bread crumbs to make a the mixture not soupy..on the dry side mix well
  6. then add the meat and mix well
  7. put the mixture in the refrigerator for an hour or more... this lets the flavors meld
  8. make meat balls
  9. place in a covered baking dish and microwave for 5 minutes ... check to see if they are almost done... take the cover off and microwave 2 more minutes ..
  10. place these in your favorite sauce and let simmer..

The Doctor put my youngest grandson on a Gluten Free Diet so I will make these for him.


I made this with Gluten Free bread crumbs for my GF wife...she loved 'em along with some GF pasta...very very good...thanks...Now I have another great GF recipe to add variety to our GF diet...She can't drink coffee either....Yikes....
