Marinated Shrimp Recipe

Ingredients

2 lbs. pre-cooked medium shrimp, peeled and deveined

1 medium red onion, cut into thin rings

2 medium lemons, cut into slices

1 cup pitted ripe olives

1/2 cup olive oil

1/3 cup minced fresh parsley

3 Tbsp. red wine vinegar

3 Tbsp. lemon juice

2 garlic cloves, crushed

1 bay leaf

1 Tbsp. minced fresh basil or 1 tsp. dried basil

1 tsp. salt

1 tsp. ground mustard

1/4 tsp. pepper

Directions

In a 3 qt. glass serving bowl, combine the shrimp, onion, lemons and olives.

In a jar with a tight fitting lid, combine the remaining ingredients, shake well..

Pour over shrimp mixture and stir to gently coat.

Cover and refrigerate for 24 hours, stirring occasionally.

Discard the bay leaf before serving

Wow, my friends would love this. We host card parties once a month and are always asked to serve shrimp, this is the dish I will be serving next and I totally agree with your choice of red wine vinegar over white vinegar. Great post. This one gets a 5 from me.
