Marinated Shrimp

- 2 lbs. pre-cooked medium shrimp, peeled and deveined shopping list
- 1 medium red onion, cut into thin rings shopping list
- 2 medium lemons, cut into slices shopping list
- 1 cup pitted ripe olives shopping list
- 1/2 cup olive oil shopping list
- 1/3 cup minced fresh parsley shopping list
- 3 Tbsp. red wine vinegar shopping list
- 3 Tbsp. lemon juice shopping list
- 2 garlic cloves, crushed shopping list
- 1 bay leaf shopping list
- 1 Tbsp. minced fresh basil or 1 tsp. dried basil shopping list
- 1 tsp. salt shopping list
- 1 tsp. ground mustard shopping list
- 1/4 tsp. pepper shopping list
How to make it
- In a 3 qt. glass serving bowl, combine the shrimp, onion, lemons and olives.
- In a jar with a tight fitting lid, combine the remaining ingredients, shake well..
- Pour over shrimp mixture and stir to gently coat.
- Cover and refrigerate for 24 hours, stirring occasionally.
- Discard the bay leaf before serving
