How to make it

  • Peel skin from eggplant.
  • Cut eggplant into chunks and cook or steam in a bit of water until soft and tender
  • Drain excess liquid very well.
  • Mash up eggplant with fork or potato masher.
  • Season to taste,
  • Add eggs and mix well.
  • Stir in some grated cheese if desired.
  • Use enough bread crumbs or Panko ( Japanese bread crumbs ) to make a meat loaf mixture consistency.
  • Heat oil in skillet over medium to medium high heat.
  • Form mixture into meatballs or patties and fry in oil, both sides till firm and browned.
  • Drain on toweling paper.
  • Serve with pasta or use as a sub sandwich filling etc.
  • When cold these slice up well and are truley delicious eaten any way served.

    oops it's Meat balls ! how the heck I put Quotmeat meatballs, I dunno ( grin )Don't know how to edit! yes I put meat in quotes!!!
