My Savory Eggplant Meat Balls

- 1 large eggplant, peeled shopping list
- 3 fork beaten eggs shopping list
- salt, pepper, minced garlic, basil to taste shopping list
- bread crumbs ( fresh or dried or panko type ) shopping list
- Optional: grated cheese shopping list
- olive oil to fry shopping list
How to make it
- Peel skin from eggplant.
- Cut eggplant into chunks and cook or steam in a bit of water until soft and tender
- Drain excess liquid very well.
- Mash up eggplant with fork or potato masher.
- Season to taste,
- Add eggs and mix well.
- Stir in some grated cheese if desired.
- Use enough bread crumbs or Panko ( Japanese bread crumbs ) to make a meat loaf mixture consistency.
- Heat oil in skillet over medium to medium high heat.
- Form mixture into meatballs or patties and fry in oil, both sides till firm and browned.
- Drain on toweling paper.
- Serve with pasta or use as a sub sandwich filling etc.
- When cold these slice up well and are truley delicious eaten any way served.
