My  Savory Eggplant Meat Balls Recipe
When I was once a vegetarian, I loved this and still prepare the recipe which always gets comments that eggplant never tasted so good !

Ingredients
  • 1 large eggplant, peeled
  • 3 fork beaten eggs
  • salt, pepper, minced garlic, basil to taste
  • bread crumbs ( fresh or dried or Panko type )
  • Optional: grated cheese
  • olive oil to fry

Directions
  1. Peel skin from eggplant.
  2. Cut eggplant into chunks and cook or steam in a bit of water until soft and tender
  3. Drain excess liquid very well.
  4. Mash up eggplant with fork or potato masher.
  5. Season to taste,
  6. Add eggs and mix well.
  7. Stir in some grated cheese if desired.
  8. Use enough bread crumbs or Panko ( Japanese bread crumbs ) to make a meat loaf mixture consistency.
  9. Heat oil in skillet over medium to medium high heat.
  10. Form mixture into meatballs or patties and fry in oil, both sides till firm and browned.
  11. Drain on toweling paper.
  12. Serve with pasta or use as a sub sandwich filling etc.
  13. When cold these slice up well and are truley delicious eaten any way served.
