Spicy Rainbow Salad Recipe

Ingredients

1/4 cup fresh lime juice

1 T light soy sauce

1 tsp sesame oil

1 T sugar

1 tsp crushed red pepper flakes

1/4 tsp salt

3 mangos, firm but ripe, peeled and julienned (about 1" long pieces)

1 cup fresh blueberries

1 larg red bell pepper, thinly julienned

1/2 cup red onion, finely chopped

1/2 cup cilantro leaves, chopped

1/2 cup fresh mint leaves, chopped

Directions

Combine the first 6 ingredients in a large bowl and whisk until sugar is dissolved.

To the bowl, add remaining ingredients but don't toss until about an hour before serving.

Keep chilled.
