Amy Ruths Fried Chicken In Honey Sauce

- 1 chicken 31/2 lbs. shopping list
- 3 cups shortening ( like Crisco ) shopping list
- 1 tsp salt shopping list
- 1 cup flour shopping list
- 3 tsp black pepper shopping list
- 3 cups honey, heated to 120 degrees F. shopping list
- 2 Tbs crushed red pepper ( optional for some ) shopping list
- 6 cinnamon sticks shopping list
How to make it
- Cut the chicken into serving pieces: breasts into halves, the legs and thighs separated, plus the wing, for a total of eight pieces.
- Heat shortening in a heavy-duty skillet to 360 degrees F.
- Clean chicken pieces thoroughly.
- Season the chicken with the salt, paprika and black pepper.
- Place flour into heavy plastic bag, put the chicken pieces into the bag and shake vigorously until chicken is well-coated.
- Dust off excess flour.
- Place chicken pieces into skillet pan that has been preheated to 360 degrees F.
- Do not overcrowd pan.
- Fry the chicken until golden brown and the juices run clear when pierced with a fork.
- Approximate cooking time is 25 minutes.
- Place chicken on paper towel to drain off excess oil once removed from the pan.
- Immediately dip chicken into hot honey, then place on a platter.
- My Tip: : when I make fried chicken I often soak the chicken in buttermilk or an herbed salt brine to tenderize the chicken before I dip it into egg batter, flour, egg batter and flour again and let it set a bit. I like to make a real crispy batter this way.
