I actually ate this at Amy Ruth's Restaurant in Harlem, NY. It's very good. I often make my own breaded fried chicken and dip it into the honey sauce ( minus red pepper ) This is great!

Ingredients
  • 1 chicken 31/2 lbs.
  • 3 cups shortening ( like Crisco )
  • 1 tsp salt
  • 1 cup flour
  • 3 tsp black pepper
  • 3 cups honey, heated to 120 degrees F.
  • 2 Tbs crushed red pepper ( optional for some )
  • 6 cinnamon sticks

Directions
  1. Cut the chicken into serving pieces: breasts into halves, the legs and thighs separated, plus the wing, for a total of eight pieces.
  2. Heat shortening in a heavy-duty skillet to 360 degrees F.
  3. Clean chicken pieces thoroughly.
  4. Season the chicken with the salt, paprika and black pepper.
  5. Place flour into heavy plastic bag, put the chicken pieces into the bag and shake vigorously until chicken is well-coated.
  6. Dust off excess flour.
  7. Place chicken pieces into skillet pan that has been preheated to 360 degrees F.
  8. Do not overcrowd pan.
  9. Fry the chicken until golden brown and the juices run clear when pierced with a fork.
  10. Approximate cooking time is 25 minutes.
  11. Place chicken on paper towel to drain off excess oil once removed from the pan.
  12. Immediately dip chicken into hot honey, then place on a platter.
  13. My Tip: : when I make fried chicken I often soak the chicken in buttermilk or an herbed salt brine to tenderize the chicken before I dip it into egg batter, flour, egg batter and flour again and let it set a bit. I like to make a real crispy batter this way.
