Savory Baked Fish Recipe
I got this from our local cookbook about 12 yrs. ago. It is a very easy to do fish that taste great!

Ingredients
  • 1/2 cup celery, chopped
  • 1 lb. sole fillet or other firm white fish
  • 1/4 tsp. salt
  • 1/4 tsp. rosemary
  • 1/4 tsp. pepper
  • 1/4 tsp. paprika
  • 1/2 cup tomatoes, chopped, well drained
  • 1/2 cup green onions, chopped
  • 1/4 cup dry white wine

Directions
  1. Sprinkle celery in a shallow glass baking pan.
  2. Arrange fish over celery, slightly overlapping.
  3. Sprinkle with salt, rosemary,pepper,and paprika.
  4. Top with tomatoes and onions.
  5. Add wine.
  6. Cover and microwave on high for 10 minutes, turning twice during cooking.
  7. Fish should flake easily with a fork when done.
  8. Serving size...6 ounces.
