Light And Lovely Pink  Beet Cheesecake Recipe
A lovely pink dessert made from cooked beets with good texture and unique flavor. I lost the photo for this one, but it looks great.

Ingredients
  • Single favorite tart crust recipe
  • 3 eggs separated, room temp
  • 8 oz cream cheese room temp
  • 1/4 cup honey
  • 1/2 cup cooked cooled pureed beets ( puree in blender till smooth )
  • grazet zest from one lemon
  • 1/2 tsp each almond and vanilla extract

Directions
  1. Prepare your favorite tart crust and place to fit in a 9 inch springform pan.
  2. Bake at 350 for 10 minutes.
  3. Meanwhile, beat whites till stiff.
  4. In another bowl blend cream cheese, honey, egg yolks, lemon zest, beat puree and extracts until smooth.
  5. Gently fold in whites to blend.
  6. Pour into crust. bake about 20 minutes or until set and dione.
  7. Chill very well before serving.
