Grandmas Eggplant Parmesan Recipe
My grandmother taught me to make eggplant this way.I've been doing it since I can't remember!. My Irish husband likes to eat the eggplant with no sauce just grated cheese on it. I prefer to layer it with sauce, parmesan and romano cheese, mozzarella ... More

Ingredients
  • 2 large firm eggplants, peeled and sliced in circles
  • 3 eggs
  • 1 cup cold water
  • about 2 cups flour
  • chopped or dried parsley (about 1/2 cup)
  • salt and pepper
  • about 2 cups oil for frying

Directions
  1. In a large bowl, beat eggs with 1 cup of cold water, salt and pepper(little of each) and parsley(about 1/4 cup)
  2. My Grandma used to use a dish for this next step, but I now use a large freezer zip lock bag to simplify and add 2 cups flour, a little salt and pepper, and parsley (about 1/4 cup )
  3. Add eggplant slices (as many as could fit but dont overcrowd!) to the zip lock bag and shake well to coat the slices with the flour mixture.Dont forget to zip the bag tight before you shake!! :o)
  4. Heat oil in a large skillet until very hot- to test if ready, drop a few drops of water into the oil-if they sizzle, the oil is ready!)
  5. Dip slices, one at a time in the egg mixture and repeat with other slices.
  6. Fry slices a few at a time until golden and crispy, turn slices over every so often to be sure other side is golden and crispy also, Poke a few holes in the eggplant slices with a fork as you are frying(not too many!)
  7. Drain on paper towels.
  8. Serve with sauce and cheese or layer with sauce ,parmesan and romano cheeses and shredded mozzarella cheese and bake at 350 degrees for 30 minutes.(Eggplant Parmesan)

I love eggplant, makes my day !

Bookmarked and saved; I, too, just love eggplant. And God Bless those Italian grandmothers--now, they, knew how to cook, and thankfully, we took notice.
Thanks for sharing.

Fried Eggplant is one of my favorites and this sounds delicious!
