How to make it

  • Rinse and drain the quinoa. Bring water, cinnamon stick and quinoa to a boil in a saucepan over high heat, stirring occasionally. Reduce heat, cover, and simmer for 15 minutes. Remove from the heat and discard the cinnamon stick.
  • Blend together the milk, bananas, sugar OR syrup and salt in the bowl of a blender or food processor until smooth. Pour the milk mixture into the saucepan with the quinoa.
  • Place the pan over medium heat. Cook stirring constantly until the mixture becomes thick and creamy, 5 to 10 minutes. Remove from the heat. Stir in the butter and serve warm or cold. Garnish with cinnamon powder.

    Thanks for sharing yet another beautiful, delicious, nutritious recipe. (I will soak the quinoa in water for 2-6 hours before cooking to germinate the seeds - this increases their nutrition and will shorten the cooking time.)
