Quinoa And Banana Pudding

- 1 1/2 cups water shopping list
- 3/4 cup quinoa shopping list
- 1 cinnamon stick shopping list
- 2 cups whole milk OR soy milk shopping list
- 2 ripe bananas shopping list
- 2-4 tablespoons white OR brown sugar OR ¼ cup agave syrup shopping list
- salt to taste shopping list
- 1/2 tablespoon butter shopping list
How to make it
- Rinse and drain the quinoa. Bring water, cinnamon stick and quinoa to a boil in a saucepan over high heat, stirring occasionally. Reduce heat, cover, and simmer for 15 minutes. Remove from the heat and discard the cinnamon stick.
- Blend together the milk, bananas, sugar OR syrup and salt in the bowl of a blender or food processor until smooth. Pour the milk mixture into the saucepan with the quinoa.
- Place the pan over medium heat. Cook stirring constantly until the mixture becomes thick and creamy, 5 to 10 minutes. Remove from the heat. Stir in the butter and serve warm or cold. Garnish with cinnamon powder.
