How to make it

  • Put all the ingredients in a blender (wet ingredients first)and blend for about 30 seconds.
  • Let the batter stand for about 30 minutes (enough time to make bacon, or cut fruit).
  • Pre-heat your pan or griddle to medium heat.
  • Grease the pan with a little butter or shortning.
  • Pour about two tablespoons or so out onto the griddle, carefully tilt the griddle to thin these out, and cook them.
  • If they are thin enough, they can go without flipping, especially if you serve them rolled up.
  • Stuff them with fruit, bacon and eggs, btter, whatever you like. Spinkle with powdered sugar, maybe drizzle a little syrup on them...Go nuts!

    ..Good morning from the Tall Corn State.. I was wishing to make these with a different type of flour- either gluten free or whole wheat pastry flour -or something other than ' white flour' , for gluten sensitivity..do you know if the recipe would need to be adjusted ? thanks...being Irish, I like these but am gluten sensitive.

    I'm Irish and have never thought these to be Irish. Just a crepe, but delicious with fresh fruit (blueberries, strawberries, raspberries) and powdered sugar. YUM!
