Sweet thin pancakes that can be rolled like crepes and filled with anything you want. These gems will barely make it out of the kitchen, so double that recipe, and get lots of fruits, syrup, butter, and powdered sugar ready!

Ingredients
  • 1 cup plain flour
  • pinch of salt
  • 2 eggs
  • 1 cup milk
  • 1 tbsp melted butter

Directions
  1. Put all the ingredients in a blender (wet ingredients first)and blend for about 30 seconds.
  2. Let the batter stand for about 30 minutes (enough time to make bacon, or cut fruit).
  3. Pre-heat your pan or griddle to medium heat.
  4. Grease the pan with a little butter or shortning.
  5. Pour about two tablespoons or so out onto the griddle, carefully tilt the griddle to thin these out, and cook them.
  6. If they are thin enough, they can go without flipping, especially if you serve them rolled up.
  7. Stuff them with fruit, bacon and eggs, btter, whatever you like. Spinkle with powdered sugar, maybe drizzle a little syrup on them...Go nuts!
