Japanese Style Salad Dressing Recipe
Best served over iceberg lettuce or on any salad whose greens are sweet rather than bitter.

Ingredients
  • 1/4 Cup mirin (a sweet Japanese rice wine available in Asian markets)
  • 1/4 Cup water
  • 1 TBS dried bonito flakes (also called dried or shaved bonito tuna flakes, also found in Asian markets)
  • 1/2 Cup soy sauce
  • 6 TBS Japanese rice vinegar
  • 1/4 Cup olive oil
  • 1/2 Cup chopped gingerroot
  • 1/4 Cup honey
  • 1/4 Cup chopped carrot

Directions
  1. In a small saucepan, combine mirin, water and bonito flakes, and bring to a boil. Remove from heat and strain, discarding the solids. Chill liquid, (called a dashi broth)
  2. when dashi broth is thoroughly chilled, transfer it to a blender or food processor. Add soy sauce, rice vinegar, olive oil, gingerroot, honey and carrot, and blend until fine-textured and creamy.
  3. Per 2 TBS: Calories 54; fats :3 grams (45% of calories);cholestrerol: 0; carbs: 6 grams;sugar: 5 grams;fiber :0 ; protein :1 gram; sodium: 343 milligrams
