How to make it

  • Put potatoes and carrots into baking dish.
  • Drizzle with half of olive oil and squeeze lemon onto veggies.
  • Sprinkle with half of Italian seasoning and salt and toss lightly.
  • Bake at 350 for 25 min.
  • Remove veggies from oven and add broc, mush, zuc, squach and asparagus.
  • Drizzle with remaining oil, seasoning and salt. and toss until veggies are well coated.
  • Put back in over for 10 min.
  • Remove and stir veggies and then cook for another 10 min.
  • **Cook time varies on how small you chop your veggies. (Large pieces of potato and carrot could take closer to an hour)
