How to make it

  • In skillet melt butter then sauté onion and garlic.
  • Line bottom of shallow baking dish with 3 rows of six slightly overlapping crackers.
  • Sprinkle with 1/2 each of the cheddar, mozzarella and onion.
  • Top with half the zucchini and 1 tablespoon parmesan cheese then repeat layers.
  • Arrange tomatoes around edge then place 4 crackers in overlapping line down center.
  • Combine milk, eggs, basil and oregano then add remaining parmesan cheese.
  • Pour mixture over crackers then bake at 350 for 40 minutes.
