Ingredients
  • 1 tablespoon butter
  • 1/2 cup chopped white onion
  • 1 clove crushed garlic
  • 40 saltine crackers
  • 1 cup grated cheddar cheese
  • 1 cup shredded Mozzarella cheese
  • 1 large zucchini ends trimmed and sliced lengthwise
  • 1/4 cup grated parmesan cheese
  • 3 small tomatoes sliced
  • 1-1/4 cup milk
  • 4 eggs
  • 1 teaspoon fresh basil
  • 1/2 teaspoon fresh oregano

Directions
  1. In skillet melt butter then sauté onion and garlic.
  2. Line bottom of shallow baking dish with 3 rows of six slightly overlapping crackers.
  3. Sprinkle with 1/2 each of the cheddar, mozzarella and onion.
  4. Top with half the zucchini and 1 tablespoon parmesan cheese then repeat layers.
  5. Arrange tomatoes around edge then place 4 crackers in overlapping line down center.
  6. Combine milk, eggs, basil and oregano then add remaining parmesan cheese.
  7. Pour mixture over crackers then bake at 350 for 40 minutes.
