Apricot-Glazed Grilled Pineapple Sundaes with Rum Sauce

- 2 tbsps. apricot preserves shopping list
- 1 tsp. sugar shopping list
- Dash of ground cinnamon shopping list
- 4 1" thick fresh pineapple slices shopping list
- 1 cup vanilla frozen yogurt shopping list
- rum Sauce: shopping list
- 2 tsp. butter shopping list
- 1/4 cup brown sugar shopping list
- 1/4 cup rum shopping list
How to make it
- Combine 2 tsp. butter, 1/4 cup brown sugar and 1/4 cup Rum in a saucepan and heat until bubbling. Set aside to cool.
- Microwave preserves on high for 10 seconds or until melted.
- Combine sugar and cinnamon; stir well.
- Place pineapple slices on a broiler pan and brush with preserves and sprinkle with cinnamon-sugar.
- Broil 5 minutes or until bubbly and browning.
- Plate two slices of pineapple; top with frozen yogurt and spoon some rum sauce over yogurt.
- Serves 2.
