Tzatziki Recipe
This dip is the centerpiece for a beautiful appetizer presentation. Besides a dip, you can use this as a sauce for lamb burgers. Delish!

Ingredients
  • 1 large cucumber, peeled and grated
  • 2 cups plain low-fat yogurt
  • 1 tablespoon olive oil
  • 3/4 tablespoon red wine vinegar
  • Jane's Crazy Salt, to tast
  • fresh ground black pepper, to taste
  • 1/2 teaspoon fresh mint leaves
  • 1 small clove garlic, minced
  • cherry tomatoes
  • pita wedges
  • kalamata olives
  • red pepper strips
  • feta cheese
  • pepperocini

Directions
  1. Blend ingredients from cucumber to garlic together and chill for an hour.
  2. On large platter, surround bowl of tzatziki with cherry tomatoes, cubes of feta cheese, Kalamata olives, pepperocini, red pepper strips and wedges of pita bread.

One of my favorite dips ever. I always make extra and keep it on hand for dipping, baked potatoes, grilled meats/seafood and sammies...you name it. Thanks so much!
