Tzatziki

- 1 large cucumber, peeled and grated shopping list
- 2 cups plain low-fat yogurt shopping list
- 1 tablespoon olive oil shopping list
- 3/4 tablespoon red wine vinegar shopping list
- Jane's Crazy salt, to tast shopping list
- fresh ground black pepper, to taste shopping list
- 1/2 teaspoon fresh mint leaves shopping list
- 1 small clove garlic, minced shopping list
- cherry tomatoes shopping list
- pita wedges shopping list
- kalamata olives shopping list
- red pepper strips shopping list
- feta cheese shopping list
- pepperocini shopping list
How to make it
- Blend ingredients from cucumber to garlic together and chill for an hour.
- On large platter, surround bowl of tzatziki with cherry tomatoes, cubes of feta cheese, Kalamata olives, pepperocini, red pepper strips and wedges of pita bread.
