White Bean And Tomato Saute Recipe
This was quick, easy and good but I think it could benefit from some minced garlic and fresh basil, which I would add if I make this again. I used cannellini beans. Taken from Everyday Food magazine.

Ingredients
  • 1 Tbs. olive oil
  • 1 small onion, chopped
  • 1/2 tsp. dried oregano
  • coarse salt and ground pepper
  • 1 can (15 oz) white beans, drained and rinsed
  • 3 plum tomatoes, cut into small pieces
  • 1 to 2 Tbs. fresh lemon juice

Directions
  1. In a large saucepan, heat oil over medium heat. Add onion and oregano; season with salt and pepper. Cook, stirring occasionally until tender, 4 to 5 minutes.
  2. Add beans and tomatoes. Cook, stirring occasionally until tomatoes are tender, 3 to 4 minutes. Remove from heat. Add lemon juice, salt and pepper to taste.
